- 185 g butter or equivalent alternative coconut oil, etc
- 40 g Carob powder
- 4 Flaxseed eggs 7g Flaxseed : 20ml water per 'egg'
- 120 g Maple syrup
- 100 ml milk cow or plant
- 80 g Gluten Free flour recommend Caputo Fioreglut
- 40 g Coconut flour
- 40 g Chestnut flour
- Pinch of salt
Preheat oven to 180C, and line a square/brownie tin (25cm).
Blend flaxseed into a fine powder, add water and set aside to thicken.
Place butter in a small saucepan and melt over a low heat, when two-thirds melted add the maple syrup and mix together. Remove from heat.
Once thoroughly mixed, add carob powder and whisk gently to incorporate to make a thick 'chocolately' batter.
Put all the flours into a mixing bowl, add the salt. Gently whisk the flaxseed eggs into the butter batter, and pour into the flour.
Carefully mix the batter into the flours, and transfer to the prepared tin.
Bake for approximately 25-30mins. Check with a skewer, and leave to cool completely in the tin before lifting out and cutting into portions.
